What Is Coffee Cupping? How Kona Coffee Is Tasted and Scored

How the Pros Judge a Coffee

Ever wonder how experts decide that one Kona coffee is truly special and another is just good? They use a method called cupping. It is the coffee world’s version of wine tasting, a careful, standardized way to score a coffee’s quality. Understanding cupping gives you a peek behind the curtain at how great Kona earns its reputation, and it can make you a better taster at home too.

What Cupping Is

Cupping is a standardized tasting process. The same amount of coffee is ground the same way, brewed with the same water at the same temperature, so the only thing that changes is the coffee itself. This lets tasters compare different coffees fairly, side by side, and judge exactly what each one brings to the cup.

How It Works

A cupping follows a set ritual. First, tasters smell the dry grounds, then hot water is poored over them and they smell again as a crust forms on top. After a few minutes they break that crust with a spoon and inhale the released aromas. Finally, they slurp the coffee loudly from a spoon, which sprays it across the whole tongue so they can taste every detail.

What Tasters Score

  • Fragrance and aroma: how the dry and wet grounds smell.
  • Flavor and aftertaste: the taste and how long it lingers.
  • Acidity, body, and sweetness: brightness, weight, and natural sugar.
  • Balance and overall impression: how it all comes together.

What the Scores Mean

Certified tasters called Q graders rate coffee on a 100-point scale. A score of 80 or above officially qualifies as specialty coffee, 85 and up is considered excellent, and a 90 is rare and exceptional. High-quality 100% Kona coffee regularly lands in the specialty range, which is one reason it commands its premium reputation.

Try Cupping at Home

You do not need to be a professional to try it. Grab a few coffees, grind them the same, pour hot water over each, and practice smelling and slurping. You will start to notice the chocolate, nutty, and bright notes that make Kona special. It is a fun way to train your palate and appreciate just how much craft goes into every great cup.
